Tomato Saaru

Udupi Tomato Saaru is a very popular vegetarian dish that originated from the temple town of Udupi in the Dakshina Kannada district of Karnataka state in India. Udupi restaurants are very popular for their tasty vegetarian cuisine. Tomato Saaru is commonly served along with cooked white rice, papad, and vegetable Palya(fry).


Tomatoes are rich in antioxidants, Vitamin A, Vitamin B, Vitamin C, potassium, folic acid, and lycopene.

Toor dal is a good source of protein, fiber, iron, and folic acid. 


Turmeric is well known for its anti-inflammatory and anti-microbial properties. Hence it is a good remedy for joint pain, heart issues, and skin problems. Curcumin which is found in turmeric has been found to be beneficial in slowing the aging process and preventing Alzheimer's disease.

Tamarind juice added to saaru is a good source of vitamin c. 

Rasam powder contains spices such as coriander, cumin seeds, red chilies, and green curry leaves. These spices are beneficial for general health.


Though saaru is commonly served with rice, it tastes good even with cooked quinoa making it a healthier option.

Ingredients :

  1. Tomatoes - 2 Nos.
  2. Green Chilli - 1 or 2 Nos. (Optional).
  3. Coriander leaves - 1/4 cup.
  4. Toor dal - 1 Cup.
  5. Saaru/Rasam powder - 2 Tsp.
  6. Jaggery powder - 2 Tsp.
  7. Tamarind - small lemon size.
  8. Salt - 2 Tsp.

Seasoning Items :

  1. Red Chili's - 1 No.
  2. Mustard seeds - 1/2 Tsp.
  3. Urad dal - 1/2 Tsp.
  4. Curry leaves - 8 - 10 Nos.
  5. Asafoetida (Hing Powder) - 1/4 tsp.
  6. Ghee/Oil - 1 Tsp.

Instructions :

  1. Wash Toor Dal 2 to 3 times thoroughly.
  2. Wash tomatoes, green chilies, and cilantro.
  3. Soak tamarind in 1 cup of water.
  4. Roughly quarter the tomatoes and slit the green chilies lengthwise.
  5. Add washed Toor dal into the cooker insert vessel.
  6. Add  2 1/2 cups of water and turmeric to the cooker insert vessel.
  7. Add chopped tomatoes into another cooker insert vessel.
  8. Place the trivet or grid at the bottom of the pressure cooker.
  9. Add 1- 2 cups of water inside the pressure cooker until it submerges the trivet/grid.
  10. Place both the insert vessels over the trivet/grid.
  11. Cover the cooker vessel containing tomatoes with a lid.
  12. Close the pressure cooker lid and insert the weight on the top of the pressure cooker. 
  13. Place the pressure cooker on the stove for cooking.
  14. Let the cooker whistle 3- 4 times and then keep it in low heat for 2 minutes before switching off the stove.
  15. Squeeze the soaked tamarind to make a juice and add this to a vessel.
  16. Add 2- 3 cups of water to a vessel, add the tamarind juice to it and bring it to a boil.
  17. Open the cooker once the pressure is released.
  18. Remove the cooker vessels carefully.
  19. Mash the Toor Dal with a masher.
  20. Add the cooked tomatoes and the mashed Toor Dal from the cooker to the tamarind mixture vessel and boil it for a minute.
  21. Add Rasam Powder, jaggery, salt, hing powder, curry leaves and bring it to a rolling boil.
  22. Heat the seasoning pan. Add ghee, mustard seeds, urad dal, and broken red chili pieces.
  23. When the urad dal color changes to a golden brown color and when the mustard seeds start making crackling noise, add curry leaves, switch off the stove, and remove the pan.
  24. Add the seasoning to the boiling saaru or rasam. 
  25. Switch off the stove.
  26. Lastly, add chopped cilantro and close the lid. Yummy Udupi tomato saaru or rasam is now ready.
  27. Tomato Saaru is commonly served with rice, papad, and palya (Vegetable fry).
