Kosambari

Kosambari is a simple, and healthy refreshing salad. It finds its origin in Southern India. In traditional south Indian events food is served in large plantain leaves. The food items are served in certain specific places in the leaf and Kosambari decorates the top portion. However, it can be consumed as a low-calorie snack for weight loss. The main ingredients for this refreshing salad are moong dal, cucumber, shredded coconut, ginger, green chillies and a seasoning. The coconut added to this salad enhances the taste. It is served raw and dressed in cilantro and lemon juice for a tangy flavor.


Moong dal (Green gram split) is a good source of protein and fiber. Cucumber is low in calories, keeps the body hydrated, and is good for the skin. Coconut is nutritious and is packed with healthy fat, fibers, and calcium. Ginger has anti-inflammatory and anti-microbial properties and aids in digestion.

Ingredients:

  1. Moong Dal (Green gram split) - 1 Cup
  2. Shredded Coconut: 3 Tbsp.
  3. Cucumber - 1
  4. Green Chilies - 1-2
  5. Lemon/lime - 1/2 to 1
  6. Salt - 1/2-1 tsp.
  7. Cilantro - 2 tsp.

Seasoning Ingredients:

  1. Mustard Seeds - 1 tsp.
  2. Urad Dal - 1 tsp.
  3. Red chili - 1 tsp
  4. Curry leaves - 6-10
  5. Oil - 1 tbsp.
  6. Hing/Asafoetida- 1/4 tsp.

Instructions:

  1. Wash the moong dal 2-3 times thoroughly.
  2. Soak the moong dal for 30 minutes.
  3. After 30 minutes, drain the moong dal and keep it aside.
  4. Chop the cucumber into small pieces.
  5. Slice the lemon into small pieces.
  6. Chop the cilantro and keep it ready.
  7. Slit the green chillies and chop the ginger.
  8. Add the drained moong dal to a bowl or a container.
  9. Add the chopped cucumber, shredded coconut, slit green chillies and chopped ginger.
  10. Squeeze the lemon juice into a bowl.
  11. Add salt, chopped cilantro and mix.
  12. Place the seasoning pan on the cooking range.
  13. Add oil to the seasoning pan.
  14. Add mustard seeds, urad dal, red chilli, Hing(asafoetida) and curry leaves.
  15. Saute the seasoning ingredients for some time.
  16. Add curry leaves.
  17. Add the seasoning to the kosambari bowl and mix thoroughly.

Kosambari is ready to serve.
