Avocado Sandwich

Grilled avocado sandwich is a very tasty and healthy vegetarian dish. Avocado is a fruit rich in monosaturated fats, vitamins, and minerals such as magnesium and potassium. Avocados were originally grown in Mexico. They have a dark green and rough outer layer. The flesh of the fruit is light green with a smooth buttery texture and the taste is very similar to tender coconut flesh. It is heart-healthy and is good for vision.


Cucumber is low in calories, keeps the body hydrated, and is good for the skin. It is loaded with vitamins, minerals, and fiber.  Tomatoes are rich in vitamins, potassium, folic acid, and lycopene. 

Lettuce is crunchy and contains high water content which helps in hydrating the body. It is rich in Vitamin A which helps in improving vision and is good for bones.


Onion has antibacterial and anti-inflammatory properties. Spinach is rich in Vitamin A, folic acid, and fiber.

Ingredients

Bread - 12 to 16 slices

Avocados - 2-3 Nos.

Tomatoes - 2-3 Nos.

Onion - 1 

Cucumber - 1

Lettuce - 1 Cup

Spinach - 1/2 cup

Salt - 1 tsp.

Pepper - 1 tsp.

Tomato sauce - 1/4 cup.

Butter - 2 Tbsp.


Instructions

  1. Wash all the vegetables thoroughly.
  2. Cut the Avocado in half, open it, and remove the seed carefully.
  3. Take the sliced avocado and peel the skin.
  4. Slice and chop the avocadoes.
  5. Transfer the chopped avocadoes to a bowl and keep them aside.
  6. Slice/chop the cucumber, tomatoes, onion, and lettuce.
  7. Take the bowl containing the chopped avocados and mash it.
  8. Add chopped onions, salt, lemon juice and mix them thoroughly. 
  9. This paste is popularly known as Guacamole.
  10. Keep the Panini grill sandwich maker for heating.
  11. Toast the bread slices and keep them aside in pairs.
  12. Smear the avocado paste on the upper side of the bread slices evenly.
  13. Place four cucumber slices on one bread and 4 tomatoes on the other.
  14. Add salt and pepper to both the bread slices. 
  15. Add onions on one bread and spinach on the other.
  16. Add tomato sauce to both the bread slices. 
  17. Add chopped lettuce on both the bread slices.
  18. Place one bread slice on top of the other slice with the vegetables sandwiched in between.
  19. Add some butter to the grill and grill the sandwich for a few seconds. Note: Please ensure that you do not keep it for a longer duration since it may get over-grilled.

The yummy sandwich is now ready.
