Spinach Tambuli

Tambuli is a yogurt-based delicacy that is popular in the coastal region of Karnataka state in Southern India. Tambuli is a short form of tampada huli which means cold curry. It is a soothing curry for summer which has a cooling effect on the body. The spinach tambuli can be prepared with basic ingredients such as spinach, shredded coconut, yogurt/curd or buttermilk, and cumin seeds. There are many varieties of Tambuli such as Menthe (fenugreek seeds) Tambuli, Erulli (Onion) Tambuli, and Shunti (Ginger) Tambuli to name a few.

The summer season in the coastal regions can be intimidatingly hot and humid. In such conditions, Tambuli can be a very refreshing dish.



Spinach is one of the main ingredients in this dish.  It is packed with nutrients and antioxidants and is a good source of iron, calcium, vitamins, minerals, and folic acid. It is good for the eyes, heart, bones, and hair. Yogurt is high in proteins and calcium. It has probiotic properties which are good for the gut. Coconut is widely used in the coastal region of Karnataka and is highly nutritious. Cumin seeds are good for digestion and weight loss, and they add a unique flavor and enhance the taste.

Spinach Tambuli can be served with rice, quinoa, and millet.

Ingredients:

  1. Spinach - 2 - 3 Cups
  2. Shredded Coconut (unsweetened) - 1 Cup
  3. Yogurt - 2 Cups
  4. Green Chilies - 2 -4
  5. Ginger - 1 - 2 inches (optional)
  6. Jeera - 1 Tbsp.
  7. Salt - 1 tsp.
  8. Ghee/clarified butter - 1tbsp.
  9. Water - 1/2 to 1 Cup

Seasoning:

  1. Red chili - 1
  2. Mustard seeds - 1 tsp.
  3. Cumin seeds - 1 tsp.
  4. Ghee - 1 tsp.
  5. Curry leaves - 5-8 leaves

Instructions:

  1. Place the pan (Tava/skillet) on the cooking range and switch it on.
  2. Heat the pan and add ghee (clarified butter).
  3. Add cumin seeds and sauté.
  4. Add green chilies and mix.
  5. Add ginger and sauté.
  6. Add spinach leaves and sauté till it changes the color.
  7. Allow the mixture to cool for a few minutes.
  8. Add the spinach mixture with spices to the blender.
  9. Add salt, shredded coconut, and water.
  10. Close the lid and blend the ingredients.
  11. Add yogurt and blend into a fine paste.
  12. If required add some water.
  13. Remove the blended mixture into a container and keep it aside.
  14. Place the seasoning pan/griddle on the cooking range and switch it on.
  15. Add ghee (clarified butter).
  16. Add mustard seeds, cumin seeds, red chili and sauté.
  17. Add curry leaves and fry.
  18. Add the seasoning to the blended spinach tambuli bowl and mix.

Spinach Tambuli is now ready to serve with rice, quinoa, or millet.
