Gongura Chutney

Gongura chutney is a very popular vegetarian dish in the states of Andhra Pradesh, Telangana, Karnataka, and Tamil Nadu in India. Gongura (Sorrel) leaves are a good source of folate, iron, Vitamins, and minerals such as calcium, potassium, and magnesium. Hence, it is good for bone health, skin, and hair.


Gongura has anti-microbial, anti-inflammatory, and immunity-building properties. Vitamin A improves vision health and may be helpful in preventing macular degeneration. 


Gongura leaves are sour and tart in flavor. It is normally served with rice but goes well with quinoa too.

Ingredients:

  1. Gongura leaves - 2 - 3 cups or 1 bunch
  2. Onion - 1 large
  3. Ginger root- 1 inch 
  4. Green Chillies - 6-10
  5. Urad Dal - 2 tsp.
  6. Jaggery - 1Tbsp.
  7. Water - 1/2 cup
  8. oil - 2 Tbsp.
  9. Garlic - 8 - 10 cloves

Instructions:

    1. Remove the gongura leaves from the steam
    2. Wash the leaves thoroughly and keep them aside.
    3. Chop the onions.
    4. Finely chop the garlic cloves and keep them aside for seasoning.
    5. Heat a pan on medium heat and add urad dal.
    6. Dry roast the urad dal to a light brown color. Transfer the roasted dal to another plate.
    7. Heat the pan and add oil. Add green chilies, chopped onions, and sauté together.
    8. Add chopped Gongura leaves to the pan and fry.
    9. After the Gongura leaves change their color switch off the stove and allow it to cool.
    10. Add the roasted urad dal to a mixer and grind them to powder.
    11. Add the cooled sautéed ingredients to the mixer jar.
    12. Add salt, jaggery, and water. Grind them to make a fine paste.
    13. Remove the gongura chutney to a container.

    Seasoning:

    1. Place the tadka or seasoning pan on the stove. 
    2. Heat the seasoning pan and add oil.
    3. Add chopped garlic and fry it until it turns to become golden brown.
    4. Add the garlic seasoning to Gongura Chutney.

    Yummy Gongura chutney is now ready to serve!!

    Gongura chutney goes well with rice or quinoa.

    It can be stored in a refrigerator for 7 to 8 days. It can be stored in the freezer for longer storage.
