Green Beans Fry

Green Bean Palya(Fry) is a very popular vegetarian side dish. The variety of Green Bean Palya in this article is very common in the southern coastal belt of Karnataka state in India.


The main ingredients of Green Bean Palya are Green Beans, Shredded Coconut, and Turmeric.

Green Beans belongs to the Legume family. They are a good source of Fiber, Vitamin C, and Phosphorus.

Ingredients:

  1. Beans - 1 Lb
  2. Jaggery - 1 small piece or 1 Tsp.
  3. Turmeric - 1/4 Tsp.
  4. Salt - 1 tsp.

Masala Ingredients for grinding/blending

  1. Red chilies - 2 to 3 Nos.
  2. Shredded coconut - 1/4 cup
  3. Cumin seeds - 1/2 Tsp.
  4. Mustard seeds - 1/2 Tsp.
  5. Tamarind - Small Piece

Items for Seasoning:

  1. Red chilies - 1 No.
  2. Urad Dal - 1 Tsp.
  3. Mustard seeds - 1 Tsp.
  4. Curry leaves - 10 Nos.
  5. Oil - 1 Tsp.
  6. Curry leaves - Few 

Instructions:

  1. Wash the Green beans.
  2. Chop the Green beans into small 1/4 inch pieces.
  3. Add all the masala ingredients into the mixer or blender.
  4. Grind the masala to a coarse paste adding the necessary amount of water. 
  5. Heat the skillet. Add oil, mustard seeds, urad dal, cut red chilies, and curry leaves.
  6. Add chopped green beans when mustard seeds start making a crackling sound.
  7. Add turmeric powder, jaggery, 1/4 to 1/2 cup of water and close the lid and cook the Beans Palya for 8 to 10 minutes. 
  8. Keep checking the pan mixing the fry a few times.
  9. Add salt and ground masala after the green beans change their color indicating that it is cooked. Mix it well and cook for another minute.
  10. Green beans fry is ready to serve. 
  11. Green Bean Palya (Fry) is commonly served with rice and rasam. It is also served as a side dish with roti or chapathi.
